Bruschetta recipes for Diabetics

Ingredients:
4 large tomatoes
6 cloves of garlic
Large handful of fresh basil
½ cup Romano cheese
¾ cup, plus a little more, extra- virgin olive oil
Cayenne pepper to taste
2 teaspoons kosher salt

Putting it together:
In food processor, puree 1 tomato, transfer to a medium- size bowl.
Add the 3 other tomatoes to the processor with garlic and basil and pulse food to chop into small chunks…..do not puree.
Add to the pureed tomato mixture and stir.
Add the Extra Virgin Olive Oil, Romano Cheese, salt and cayenne pepper.
Serve on toasted crostini or pour on strained pasta
Add broccoli, arugula or your favorite steamed vegetable.
Yield: about 10 ¼ cup servings
